Right, I have just had a look at my bookshelves and these are the bike related technical books on them, well not counting the actual bike manuals.
Some of these pages i am showing have sample pages for the books so its worth having a trawl through them too see if its the kind of stuff your interested in.
Not all are about dirtbikes so you are perhaps better off reading reviews of them...
Motocross and Off-road Performance Handbook by Eric Gorr.
Which rather unsurprisingly enough is about motocrossers and offroad bikes, its very informative and well presented.
Much of the information is also bike specific.

The Racing Motorcycle - A Technical Guide for Constructors, Volume 1 and 2
Both of these books are quite expensive but are a weighty tome indeed, just make sure the dog isn't under the letterbox when they get delivered otherwise it will get flattened.Volume 2 is to me more hands on and Volume 1 has more maths.
These books cover all sorts of information from making aluminium tanks to chassis design and gearcutting.
