Torque for the clamp bolts is 14.5-ft-lb
Oil height is 3.15-4.33 inch from top
This info from 2001 owners manual.

Just something I learned the hard way many years ago. It helps to loosen the fork caps while the fork tube are still in the triple clamps. I'm sure a lot of people know that, now for the lesson learned the hard way. If you do not loosen the top triple clamp pinch bolts first you can't unscrew the fork cap and you may destroy the fork cap trying to loosen It. I twisted off the aluminum nut portion of the fork cap on my 1990, that was a bad day.

years ago when i was wrenching at a shop, the guy that taught me how to do forks had a fancy specialty vice for forks.

the first set of forks i did at home took me a long time, like 4 hours ... not fun

Dude, I never thought of that...I have my mountain bike sittin in one now.  I'll try that the next time I service my forks.
