Here is what I did.  First I took Cam's advice and did the washer thing.  Second I went to rockymountainatvmc.com and bought a pair of pro taper atv high bend bars.  I also had to get the fat bar adapter which gives you like 1'' of rise.  I am 6'5'' and it fits me fine now.  http://www.rockymountainatvmc.com/handlebarinfo.do  this link will give you all the info you need.  The bars are 4.75'' tall the adapter gives you some and the washer will give you more.  I hope that helps.

Travis Pastrana fmx bars by answer/pro taper are the tallest, unless you get into an atv bend, then your draw is shorter. The kx highs i run are about an inch taller than cr highs. I went from cr high to kx high(by pro taper) and could feel more how they pitched back more than how they rose a little.   I should post a pic... my grips are probebly 3-4 inches north of stock.

BasketCase:
I just picked up a Renthal Jimmy Button bar, they are 8mm taller than the CRs.  I havnt found any info on the Pastrana/Pro Taper bars, if someone has the link that would be cool.

Several guys on another 500 forum liked these.

Just be sure no matter what you go with to check full lock to lock on the bars and throttle/clutch pull.
If I remember correctly the tallest guys put the most in rise as they could and had to get longer cables.

BasketCase:
I just put the Rox pivoting risers on a set of jimmy button bars with 3/8" spacers under the bottom clamps.  Im 6'7" and it is almost comfortable.  The cables just reached, I think I will ride this for a while before trying to get any more highth out of it.
